Fourth of November

It is the fourth Sunday of November. And the last Sunday before the Thanksgiving holiday. Niles and I enjoyed the company of Don Pepino from last week so he was invited back. We wanted to find out how this sauce tastes in a standard New York style pizza so our plan was to start with a simple cheese pizza built the normal way. Then to try a pizza where the cheese goes down first with the sauce swirled on top.

Third of November

It is the third Sunday of November. This week I wanted to make some Grandma pizza. I’m not sure how it got that name but I have trouble making a pizza that is called that. I’m not grand and I’m also not a mother so I’ve been calling it sheet pan pizza instead. Making small pizzas for each individual is fun but it doesn’t feed a lot of people quickly. I wanted to try a pizza that I could make for social events when I don’t want to spend the whole time in the kitchen making pizza.

Second of November

It is the second Sunday of November. When I was at the grocery store picking out cheeses for today I bought another cheese I normally don’t use. Muenster. Someone once told me that Little Caesar’s pizza uses this cheese. The last time I had that pizza was at a friend’s house when I was taking classes at the university. That was in the 90s. We went to his house to watch a VCR recording of a Wrestlemania match from the 80s and ordered two of the three foot pizzas.

First of November

It is the first Sunday of November. And the first day of November as well. I’ve baked pizza five weeks in a row, which is probably a new record for me, and decided to take a break this Sunday. I’ll instead discuss the pizza I made this week using leftover dough. The pan pizza dough recipe is enough for two pizzas but I only have one cast iron pan. I saved the other half of the dough for some mid-week pizza.

Fourth of October

It is the fourth Sunday of October. It’s time again to try some pan pizza. I used to love the pan pizza from Pizza Hut. I’m talking about the pizza they served back in the day and not whatever they are selling now. To be honest, I haven’t eaten Pizza Hut in five years since my last disappointment. My opinions on the subject are now that old and may not reflect what you can buy today.

Third of October

It is the third Saturday of October. Pizza day is normally on a Sunday but this week Erika came down for a visit and Terri asked if I would like to make some pizza. I cannot pass up on an opportunity to make pizza so this week was a Saturday instead. Everyone wanted pizza so I increased the dough recipe up to 1,500 g to get around nine dough balls. I didn’t have enough all-purpose flour and the last 100 g was bread flour instead.

Second of October

It is the second Sunday of October. Erin, Chris, and Elliott came up for a visit today and it was the first time I’ve seen them since Christmas of last year. I’ve rented a pinball machine for two months and told them they had to come up and play some games while I had it. Here is Elliott earning an extra ball: Playing pinball works up an appetite so I decided to make some pizza for them.

First of October

It is the first Sunday of October. I decided to make two pizza sauces for today. All the ingredients were the same except that in the first sauce I used Cento San Marzano tomatoes. At the Giant these cost around $4 per can. On the label it says, “Product of Italy”. Not sure if that means the tomatoes were actually grown in Italy or not. It then says “Pomodoro San Marzano” right below that to sound more authentic.

Last of September

It is the last Sunday of September. Niles is out of town this weekend so I made a small batch of dough which normally yields three dough balls. I decided to do some cheese blend testing and instead portioned the dough into a single 280 g ball for a 12 inch pizza and then four balls each at 135 g for the various blends. I’ve been bouncing between 270 g, 275 g, and 280 g for the 12 inch pizza and I’m going to stick to the higher side for now.
